The simple answer is the rear head is more efficient due to the more centralised spark plug location. However, I would go out on a limb and say that both the difference and the benefit on a standard bike would be immeasurable.
What you will find is that the V-piece won't fit with the conversion unless you use the obscenely expensive NGK R5300A spark plug and [discontinued] cap, which has been known to cause issues with some PGM-IVs.
It's probably a £200 kit if you were to sell it. If you have the head gasket, spark plug, and cap too, it's a £300 kit.
