Don't worry, running rich won't bother it. Even if the weather is cold and wet on your track day you will probably still be nice and safe with your jetting. The worst that can happen (in my experience) is that the weather will be even hotter than when you last examined the plugs and you will lose some horsepower. I've jetted so rich (because i didn't know any better) that the bike wouldn't run on full throttle in fourth gear or higher (the bike was an MZ250 racer). This fouls the plugs eventually, but that isn't the end of the world. I always jet a little on the rich side to avoid engine damage.
