MC18 race bike, a few questions

hello folks,
just picked up a new track toy in the shape of an 89 SP. i had grown abit tired of wrestling the old Buell around so i went in the complete opposite direction and picked up the MC18 (a little old but the price was right). anyways after some testing during the last race weekend of the season some issues have been revealed that i'm not sure how to handle.

First off is the lack of functional RC valves. i can't figure out if the servo is cooked or if the butchered wiring is to blame. though it does have power up to the servo according to my multi-meter. since it is a race bike and i'm not too worried about the narrowing of the powerband what are the other downsides to keeping them permanantly open? is it possible to bench test the servo so i atleast know if it needs replacing if i do need to keep it?

secondly, the carbs have blanked off PJs and nothing attached to the brass tubes that come out of the top of the carbs. shouldn't there be something attached to these things? they are not plugged either.

finally, i was told the bike runs on 110 octane, non-oxeganated leaded race fuel (VP Power mist) with premix at 30:1. is that the right fuel? what would be a good baseline main jet sizes for that? it was running #148, #152 main jets but i read that HRC recomends something like 180, 188. for engines running on pre-mix with blanked off PJs. that seems like quite a differance. what gives? the slow jets are are #40s by the way.

during it's short test runs the bike obviosly ran like crap, being pulled by 125s on the front straight and breaking up near max revs.

i'm loving the bike otherwise. steering is so quick and neutral and i can already carry WAY more corner speed than i could have ever hoped to on the Buell. just need to get the motor sorted over the winter.
