Actually, your wrong pbekkerh. Not running a thermostat will cause uneven temps in the motor and depending on where the sensors are, it can cause the gauge to lead you to the false impression the motor running cooler, or hotter, than it really is. It can also play havoc with the fan. I would never reccomend running without the thermostat or restricter. I've seen some cars that have to use the full thermostat because without it the coolant would be directed the wrong way and the car would overheat (and the gauge wouldn't know it).
If you have a motor with a cooling problem, removing the t-stat won't fix the problem! It will only mask it temporarily. You need to fix the (real) problem.
