Different dynos certainly do produce different results, and there has been many an argument about it.
The dyno Fenton's was run on is very consistent, and the operator knows exactly what he is doing when testing 2-strokes, and also has a lot of previous runs and setup data to compare the results with.
My bike has made a consistent 66hp on that dyno (68hp with some wacky pipes) over a couple of years and several runs, but there is no reason why it wouldn't show 62~63hp on the same dyno yours was run on if that's how it is calibrated.
As others have mentioned, the real use of a dyno is to measure % gains and losses after a given modification. The only real way you can evaluate the tune of your bike is to do a completely stock run (which incidentally always showed bang on 45hp at GT Performance) and then another run with the modifications. You should normally be looking at 35~37% increase for the "standard" derestriction modifications. If the dyno reads 5% low for example, then there is nothing wrong with 57.6hp.
