30:1 is a good start. It's the recommended figure from HRC, although it's for AVGAS/747 and could be considered a little "oil-rich" 10~15 years on considering modern synthetic oils and road riding conditions.

I'm not going to tell you anything different to HRC recommendations, but I would suggest experimenting a little.

There certainly should be both a washer between the engine casing and the pump shaft (to stop the shaft tearing into the alloy), and an oil seal in the bottom of the pump to stop the 2T from draining into the transmission.

My guess is that the pump was put back in place after some kind of lubrication/pump failure just to blank the holes off instead of using a proper blanking plate.
