A lot of it is also down to suspension setup and steering angle.
I've ridden an MC21 with a 120 front (on an RVF400 front-end, c/w 3.5" front rim) and the handling was abysmal, but I've also ridden an MC21F3 with a hand cut 120 slick on a standard 3" Enkei rim (160 on the rear), and it was an absolute peach!
The HRC suspension/angles make all the difference. If you are mixing'n'matching suspension components and wheel widths, then it will probably take a lot of twiddling until it's right, but you should be able to get it to work within reason.
I really can't see the point of anything bigger than a 160 on the rear though, and to be perfectly honest, any reason to run anything other than 110/150 -- maybe a 115 on the front if you want to run slicks and it's the closest size you can get. Even the F3 is running 110/150 now, and you'll be hard pushed to find an NSR that handles and turns any better. Racer38 was the last person on here to ride it; maybe he'll care to comment on its handling.
