They all perform similarly really, so not much to choose between any of them. Get what you can on your budget. If you race then cheaper mild steel is likely a better choice in case you have the odd tumble. If you can pick up some stainless pipes on the cheap though, it doesn't matter!
Best place to get a jet kit is either on here (keep an out on Classifieds) or Yahoo! Japan. Again, Moriwaki-man is probably your best bet. A jet kit will (should) come with X and Y pieces, adjustable needles, power jet blanks, slow jets, and a range of main jets.
