If the problem you are having is that the bike is running too hot, (and I'm not sure if that is your problem), then I would suggest that removing the thermostat is not going to achieve much, unless the thermostat is faulty.
The reason I say this is because if the engine is hot, you can be sure that the thermostat will be open anyway.
If you really need to improve the cooling abilities of the cooling system then maybe try installing a fan on the back of the radiator?
I have seen a bike with a 120mm, 12 volt computer fan attached to the back of the radiator. I have no idea how effective it was.
