G'day Greggo,
Firstly, I rode at PI on 10th of February and the newly resurfaced track is billiard table smooth and very grippy. You will have a ball regardless of gearing. I rode my Gsxr as I'm scared of seizing my NSR around there and am too lazy to fatten up the jetting. What sort of RWHP is your bike putting out? If you go to tall with the gearing, accelerating out of Honda corner, Siberia and MG is going to be painfully slow. I think start by going one up on the front and take a sprocket with you that is two down on the rear so you can change it after the first session if you feel you still want more top speed.
Regardless off what you choose I'm sure you will have an awesome time.
