Pirelli Rosso Corsa's are very good, heat up quickly and grip very well in most conditions. They are more road-orientated than the Supercorsas, which are still good, but are pretty lethal in the wet/cold (speaking from personal experience). The Rosso Corsa's also won the Performance Bikes Magazine giant tyre test recently.
Pirelli Supercorsas are good if the roads are dry and you can get them up to temperature - They tend to be a bit more track-orientated though (especially if you use the "SC" compound tyres). Track tyres don't always make a good road tyre!
I think tyre choice is a very personal thing, lets face it, most tyre manufacturers make good bike tyres these days, so it's down to personal preference most of the time.
