A 160 section tyre will go, but it's not ideal on a 5" rim, and doesn't suit the NSR's handling balance.
The rim ideally needs to be 5.25" (i.e. HRC, RS, or equivalent). The 5" rim "squeezes" the side-walls of the tyre in and raises the profile too much.
The same goes for a 120 section tyre on the front rim. Using a VFR rim will allow for a 120 section, but the NSR works so well with a 110/150 combination, it's pointless changing.
The real benefit to the larger rim sizes are to be had on the track. As race slicks don't come in the same sizes as road tyres (the slicks are always a little larger), the extra rim width is neded to keep the profile correct.

160/60r17 road tyre is std for most 400's, and most 400's run a 4.5 inch rim, just like the MC21.
So yes, tyre will fit and work very well. (I do prefer a 150 rear if using a 110 front, but difference is very little)
We have a 160 GPR on a MC21 rear on http://www.rpracing.co.nz/specials_nsr400r.htm Front is 120/60r17 on 3.5 inch CBR rim.
Earlier 16/63r17 (160) Michelin and 160/55r17 Dunlop etc slicks on the other hand, wont work well. These are designed for 5 to 5.25 inch rims.
The later 16/63r17 (165) Michelin and 165/55/17 Dunlop etc are designed for 5.5 inch.

i will be fitting the pipes in a couple of weeks
along with the head conversion etc
the chap doing it will be doing dyno graphs at each stage
from completly standard to bike fitted with pipes airbox mods wire splice head kit reeds and jet kit
i was planning to pass this on to andy to may be post on the site somewhere
